Chef Ivy Stark takes over El Toro Blanco



Today, chef Ivy Stark takes the reigns at El Toro Blanco as executive chef and partner. Joining restaurateur John McDonald, Stark transforms El Toro Blanco's menu with a modern approach to Mexican cooking. 


Drawing from her 20+ years of culinary experience and extensive travels throughout Mexico over two decades, Stark brings an entirely new menu to the West Village restaurant. Stark’s menu places an emphasis on Baja-style Mexican cooking, similar to how she cooked during her time in Southern California, incorporating local New York vegetables, grains, herbs and proteins.  ON THE MENU Standout dishes include Hiramasa Ceviche with lime-cured kingfish, tamarind, mezcal, fresno chiles + blue corn tostadas; Grilled Cauliflower Fajitas with chile marinade, red quinoa, toasted pine nuts and mole amarillo; and Bone-in Angus Short Rib with northern dry chili, integral rice + maggi chimmichurri. A selection of tacos including Charred Butternut Squash, Spice Roasted Chicken and Grilled Baby Octopus are offered with handmade organic, non-GMO corn tortillas or over seasonal grains + greens.
