Vegan Loaded Baked Potatoes
These baked potatoes are perfectly fluffy on the inside and loaded with delectable, dairy-free toppings.
4 potatoes (We love Yukon Gold but Russets work well, too)
1/2 cup WayFare Dairy Free Butter, divided. 1/4 cup of melted Butter for cooking and the rest for serving.
1 cup WayFare Dairy Free Cheddar or Nacho Cheddar with Jalapenos, melted
1/2 cup WayFare Sour Cream
Veggie chili (optional)
green onions or chives, sliced, for garnish
Heat your oven to 450° F. Use a fork to poke holes all over your potatoes. Cook potatoes for 25 minutes. Remove from oven and brush with melted butter and sprinkle with salt. Then place the potato back on the baking sheet, opposite side up, so that the potato can cook evenly on both sides. Bake for an additional 20 minutes.
When potatoes are baking, melt Cheddar in a saucepan over low heat or in the microwave, covered, in 20 second intervals.
After baking time, pierce with a fork to make sure they're tender and cooked. Remove potatoes from oven and (carefully!) split them open. Top with a pat of Butter, chili (if using), melted Cheddar and a dollop of Sour Cream. Garnish and dive in!
Curried Zucchini Fritters
Curried Fritters are great as an appetizer or light snack. They're lightly fried in our Dairy Free Salted Whipped Butter, giving them a slight crunch on the outside, but are soft and flavorful on the inside. Fritters are great to mix up with different flavors. Instead of zucchini you can use sauteed spinach, or sweet potato.
Ingredients: 1 medium onion, finely diced 3 zucchini, grated 1 cup whole wheat or chickpea flour 1/2 cup water (optional) 1 tsp salt 1 Tbsp sweet chili sauce 1 Tbsp black sesame seeds 1 tsp mild curry powder WayFare Salted Whipped Butter for frying
Saute the diced onion in WayFare Salted Whipped Butter until translucent.
While the onions are cooking, grate the zucchini with a hand grater using the large holes.
Mix all of the ingredients in a mixing bowl. The moisture from the zucchini should make everything the right consistency however you may need to add up to half a cup of water.
Let the mixture sit for around 20 minutes in the fridge, then stir again. This helps the fritters stick together better, but if you’re in a hurry, you can skip this step.
Form the fritters into balls, then flatten and fry in WayFare Salted Whipped Butter in a hot pan (preferably non-stick) for about 4-5 minutes on each side, or until golden brown and cooked through.
Serve immediately with sweet chili sauce or WayFare Sour Cream.
Macaroni and Cheese
This Macaroni and Cheese is the ultimate comfort food dish! Totally plant based, dairy free, indulgent, and delicious.
3-4 cups dry macaroni
4 cups WayFare Cheddar (or Nacho Jalapeno)
2 cups WayFare Sour Cream
1 tsp salt
¼ cup WayFare Salted Whipped Butter (melted)
1 sleeve Ritz crackers
Preheat oven to 400°.
Grease 8" x 8" baking dish.
Cook macaroni according to package instructions. Do not overcook. Drain and return to pot.
Add WayFare Cheddar, WayFare Sour Cream, and salt. Mix gently so that everything is mixed in.
Pour into 8" x 8" pan. Cover and bake for 40 minutes.
Microwave WayFare Salted Whipped Butter in a small bowl at 30 second intervals until it is melted.
Crush Ritz crackers into the WayFare Salted Whipped Butter, and mix.
Remove macaroni and cheese from oven. Spread Ritz crackers mixture on macaroni.
Bake uncovered an additional 15 minutes. Let rest for 15 minutes before serving.
Melty Grilled Cheese

2 slices whole grain bread
WayFare Dairy Free Cheddar or Nacho Cheddar with Jalapenos
Heat a pan over medium heat. Spread a thin layer of Butter on the outside of the bread. Add a generous layer of Cheddar to the inside of the sandwich.
Place in pan and heat until the first side is toasty. Flip and continue cooking until the second side is toasty and cheddar is just melted.
