HELLO, HWABAN!
Today, chef/restaurateur Mihyun Han and her husband Key Kim — the duo behind West Village omakase destination Kosaka — open Hwaban, a modern Korean restaurant in Manhattan’s Flatiron neighborhood. Hwaban, which means “as beautiful as a flower” in Korean, offers a distinct dining experience highlighting traditional Korean fare inspired by Mihyun's South Korean upbringing and elevated by contemporary cooking techniques and presentation.
FLOWERING PLATES
The menu is composed of starters and main dishes alongside an assortment of rice, soups and stews. The plates, intended for mixing and matching, include offerings such as Sweet Shrimp Crudo with frozen tomato pureé, seaweed, pickled cucumber + Korean pear, King Crab with poached egg + spinach in pine nut sauce, Beef Short Ribs, Red Ginseng Chicken Soup with abalone and Poached Sole with seasonal vegetables + doenjang beurre blanc. Guests can also opt for the ‘Hwaban Table,’ a set menu of assorted plates to get a little taste of everything. Desserts include the ornately decorated Buttercream Flower Cakes made with honey pecan cake or chocolate chocolate cake under layers of salted caramel buttercream. To drink, food-friendly wines, soju and sake are available along with fine and coarse-leaf Korean teas.
DESIGN DRIVEN
Designed in collaboration with Super Paprika, the 60-seat space is punctuated by Italian white marble tabletops and white brick walls, creating a clean and sophisticated feel. Round gray banquettes line the dining room while a communal table anchors the space overlooking the open kitchen. Rotating floral arrangements and vintage ceramics decorate the room along with a blossoming light fixture in the foyer, embodying the restaurant’s name. Key Kim's passion for audio technology sparked a partnership with the renowned French company, Devialet, who has outfitted Hwaban with New Phantom speakers to create unparalleled acoustics and ambiance, serving as the backdrop for the artfully plated and inventive cuisine.
