Spring has finally come to Nashville along with longer, sunny days, and flowers in bloom. It’s time to trade in that puffer coat for a sun dress and celebrate the return of lounging, dining and drinking at fabulous indoor/outdoor venues like The Pool Club at Virgin Hotels Nashville. The popular rooftop oasis is marking the moment by transforming into a lush, floral wonderland with its Spring Awakening Pop-Up. Debuting on Friday, April 1 and available through Saturday, April 30, the 360° immersive experience will showcase stunning floral décor, vibrant new libations and several new dishes that encourage hotel guests and Nashville locals to breathe in the change of season.
With the Spring Equinox in mind, Mary Jones, Director of Entertainment for Virgin Hotels Nashville, drew inspiration from three tarot cards that symbolize characteristics of the season to curate a spectacular floral cocktail program for the Spring Awakening experience in partnership with Spade & Sparrows Rosé, Patrón and Hendrick’s Gin. Awakening the senses through fresh, floral ingredients, the cocktails, priced at $18, are as beautiful to behold as they are delicious to drink.
Inspired by the tarot card that encourages spiritual enlightenment, inner illumination, divine knowledge and wisdom, The High Priestess is served frozen and features Patrón Silver, local honey, basil, fresh grapefruit and lime. The High Priestess symbolizes characteristics of Spring – desirability, mystery, sensuality, spirituality, creativity and fertility – to indicate a time to trust your inner instincts and reflect.
The Ace of Wands tarot card shows the determined exuberance of Spring through new growth and emergence into a new state of being, energy and vitality. Embodying the power of the season and the inevitable and energetic reemergence of flowers and plants, the Ace of Wands cocktail highlights florals in a refreshing mix of Hendrick’s Gin, hibiscus, mint and fresh lemon, served with a flower ice cube, to encourage embracing passion, boldness and brightness.
Radiating the fresh innocence that beckons in Spring, the VI of Cups tarot card symbolizes blossoming, tender memories and meaningful traditions through family, friendships and romances. Inspired by the nostalgia of looking at fond memories and life through rose-colored glasses, the VI of Cups cocktail features Spade & Sparrows Rosé, wine sangria and flowers, and was created to inspire reminiscing and feelings of warmth and the joy of innocence.
Spring Awakening at The Pool Club will also showcase several large format cocktails for $85. Ideal for groups, the season-inspired offerings include Garden of Eden, served in a garden pot, with Hendrick’s Gin, hibiscus, mint, fresh, lemon and flower ice; Eve’s Nectar featuring Patrón Silver, local honey, basil, fresh grapefruit and lime, served over ice in a vintage punch bowl; and April Flowers, Spade & Sparrows Rosé poured from a Porron pitcher.
To pair with The Pool Club’s lineup of vibrant libations, guests can indulge in a variety of lighter new food items highlighting fresh seasonal ingredients. Spring small plates include Guac It Like I Talk It – smashed avocado, crema, crisps and lime salt; Roasted Red Pepper Hummus – olives, pita bread and fresh veggies; and a Fruit Bowl – pineapple, watermelon, berries and tangerines. Tasty new handhelds include a Beyond Burger, served open face on bibb lettuce and topped with avocado, lettuce, tomato, pickled red onion and spicy vegan mayo; Lobster Roll with fresh poached lobster and mayo on a toasted sweet roll; and a Grilled Salmon Burger on a brioche bun with Atlantic salmon, citrus aioli slaw, pickled red onion and avocado spread. In addition, The Pool Club has partnered with Lillian’s Floral Studio to feature a DIY Bouquet Bar on select days of the Spring Awakening pop-up. On Saturday, April 9 and Saturday, April 23 from 11AM to 2PM, guests dining for brunch can visit the Bouquet Bar and design their dream floral arrangement to take home as a commemorative keepsake of the experience.
