Koslow & Cámara’s Onda now open in Santa Monica

RIDE THE WAVE

Now open in Santa Monica, Onda is the first-ever collaboration between acclaimed chefs Jessica Koslow (Sqirl) and Gabriela Cámara (Contramar), in partnership with Proper Hospitality. Meaning "wave" in Spanish, Onda conveys the shared wavelength between the chefs’ origins, evident through the ingredients and techniques from Cámara’s native Mexico and Koslow's signature California flavors.


SISTER CITIES

Together, chefs Koslow and Cámara oversee a menu that takes influence from both Los Angeles and Mexico City with starters such as chips and dips with fermented chile guacamole, sustainable seafood offerings such as whole tapioca-fried sea bream and reimagined dishes like inside out turkey pastor quesadilla and koji-marinated satsuma sweet potato. Dessert options include passion fruit crumble with hazelnuts and a raspado with cucumber granita atop figs crémeux. A producer-driven wine & beer list complement the culinary offerings alongside a cocktail program rooted in agave-based spirits.


L.A. LANDMARK

Designed by Kelly Wearstler in partnership with Sqirl design director Scott Barry, Onda's exterior honors the original 1920's Spanish Colonial landmark building. The interior features a combination of natural materials and found elements, such as a Wentrcek-Zebulon host stand, a painting by Carmen Argote, and vintage seating, while staff is smartly dressed in Ekhaus Latta.


A PROPER PARTNERSHIP Onda, which was created by Proper Hospitality (led by Brad Korzen and Brian De Lowe) in partnership with Koslow and Cámara, is an example of Proper’s collaborative endeavors with world-class local, food+beverage partners across its growing hotel portfolio, including Austin Proper Hotel & Residences (opening this winter) with McGuire Moorman Hospitality and Downtown LA Proper Hotel (opening early next year) with The Lucques Group.
