The Acclaimed Team Behind Two Ten Jack Announces Chef de Cuisine, General Manager and Beverage Director for the New Restaurant, Opening October 2018
Partners Patrick Burke, Jess Benefield and Trey Burnette of Seed Hospitality Group (Two Ten Jack in Nashville and Chattanooga) are pleased to announce the newest members of the management team for their forthcoming Japanese restaurant, The Green Pheasant, located in the heart of downtown Nashville, in the 222 2nd Ave South building, across the street from Ascend Amphitheater;www.thegreenpheasant.com.
In addition to co-chefs Jess and Trey, Kristin Beringson will join as chef de cuisine; Michael Seale will lead as general manager and managing partner; and beverage director and certified kikisake-shi (sake sommelier) Kynsey Hunter, will join the team from sister restaurant, Two Ten Jack. Scheduled to open in early October,The Green Pheasant is named after the national bird of Japan - a symbol of power, abundance and promise.
Under the direction of co-chefs Jess and Trey, chef de cuisine Kristen brings her passion for sourcing local and sustainable ingredients to The Green Pheasant team. During her four years as executive chef at Holland House in Nashville, Kristen received national and international recognition. In 2014, she opened City Winery, Nashville’s only full service restaurant, music venue, private event space and working winery. Returning to her roots in fine dining, she became the executive chef at Silo in historic Germantown in 2016. She has also competed on and won Food Network’s show Chopped.
“We couldn't be more blessed and thrilled to have the opening team we do,” says chef Jess. “Our culture is paramount and something we have worked tirelessly to create and defend over the years. To have even more teammates to help grow and share in that with us is something we are very much looking forward to.”
General manager and managing partner Michael Seale brings over 12 years of hospitality experience to The Green Pheasant, including Nashville’s own Firefly Grille and Prima. Most recently, Michael was general manager at the award-winning Chauhan Ale and Masala House.
Kynsey Hunter transitions to The Green Pheasant as beverage director, after being a part of Two Ten Jack’s bar team since it opened five years ago. A certified kikisake-shi (sake sommelier), Kynsey looks forward to highlighting sake’s diversity, breadth and depth through a beverage program that will feature cocktails on tap; Chu Highs, or shochu highballs that are popular in Japan; and an extensive list of sake and shochu.
The Green Pheasant is scheduled to open in October at the 222 2nd Ave South building in downtown Nashville, across from the Ascend Amphitheater. The menu will reflect the interrelationships between Tennessee and Japan’s culture and cuisine, combining locally sourced meats and produce with fish and other ingredients sourced directly from Japan.
