Cheese lovers, unite as we celebrate National Grilled Cheese Month, the 30-day foodie event dedicated to enjoying everyone’s favorite sandwich. 


Like every year, there are many delicious ways to celebrate the occasion, but there’s only one you can’t miss: Davila’s BBQ in Sequin is featuring the epitome of grilled cheese on its menu. The BBQ Brisket Grilled cheese strikes the perfect combination of rich barbeque and cheesy goodness! 


Imagine biting into a perfectly grilled sandwich oozing with melted cheese and tender, smoky meat. That’s what Davila’s BBQ Brisket Grilled Cheese offers, taking the classic bite to a new level with house-made smoked brisket. It’s the ultimate comfort food.


“We love celebrating barbecue all year round, but National Grilled Cheese Month is a special chance for our team to introduce BBQ brisket to customers in a new way!” said Adrian Davila, third-generation pitmaster at Davila’s BBQ. “I’m passionate about sharing the wonderful flavors of barbecue with as many people as possible, and I think this sandwich will strike a chord with many of our customers.”


The story of Davila’s BBQ is unique. In 1959, Davila's BBQ was opened by Raul Davila (Adrian’s grandfather) in an abandoned schoolhouse in Seguin. With no decorations and no cash register, the Davila family opened for business. Nearly sixty years and three generations later, Davila's BBQ has continued to grow and has been nationally recognized as one of the top BBQ places in Texas several times over. 


Adrian now leads the restaurant and continues many family traditions by cooking with passed-down recipes. He celebrates the food traditions of Latin America and Texas, taking inspiration from the vaquero lifestyle of his family history. He infuses classic brisket, ribs, and sausage with Latin spices and ingredients, creating a unique BBQ style that draws crowds nationwide. 


In 2018, Adrian released his first cookbook, Cowboy Barbecue, to share his story and cooking with even more people. The book has been featured on the Today Show, The Washington Post, and Texas Monthly.


If you can’t make it out to Seguin this month, it’s easy to recreate the crave-able dish in your kitchen. Davila shared a few simple steps to make your very own BBQ Brisket Grilled Cheese at home.


First, brush mayonnaise on both sides of two slices of white bread. Pile one of the slices high with your favorite cheese. Shredded cheddar and colby jack cheese is a great choice that can stand up to the big flavors of BBQ brisket.


Then, add two to three layers of thinly sliced brisket on top. Add as much cheese as the slice of bread can handle, then cap it all off with the second slice of bread.


Preheat a griddle with a pat of butter, then carefully place the sandwich on the grill, trying not to let it topple. Gently press down with a spatula as the bread browns, ensuring the creation sticks together and heats evenly.


Once you’re sure the sandwich is stuck together, carefully flip it to brown the second side. Remove it, and enjoy an epic cheese pull. Bon app
