Violet, now open in New York City

AN ODE TO RHODE

Named after the state flower of Rhode Island, Violet is the sixth restaurant from the Pizza Loves Emily Group, led by chef Matt Hyland. Distinct from EMILY and Emmy Squared, Violet focuses on grilled cuisine paying homage to New England and Rhode Island's flavors and abundance of fresh seafood. The anchor of the menu, grilled pizzas, are inspired by Hyland’s nostalgia for Al Forno in Providence - where he often ate while attending culinary school and where he and Emily had their first date - and his desire to fill the void of grilled pizza destinations in New York City.

THE GRILL OF IT ALL

Naturally shaped pies, which are grilled on both sides and served with scissors to cut slices, feature seasonal and innovative toppings like Atwells with broccoli + pistachio pesto, Squash with winter squash, Sichuan oil, chèvre + thyme and Hardika’s Achaarlic Bread with roasted garlic pickle, herbs + crispy neem leaf. Shareable plates include offerings such as Grilled Shrimp with Calabrian Sichuan butter + cilantro and Stuffies with linguiça, pretzel stuffing + uni. A rotating selection of fresh, house-made pastas like Spaghetti with clams, dashi, seaweed + bonito butter and Pork and Duck Tortellini with dashi brodo + Szechuan oil round out the dinner menu.

VYING FOR VIOLET

To drink, guests can enjoy cocktails like Princess Bay with violet flower-infused vodka, Prosecco, lemon + sugar. Beer and wines are available on tap or by the bottle.
