FRESH CAPRESE TOAST



INGREDIENTS

  • 1 loaf Italian bread, cut into 12 slices

  • 8 oz fresh mozzarella, sliced and torn in pieces

  • salt and pepper

  • 1/2 tsp Italian seasoning

  • Sliced ripe red tomatoes

  • 1 tbsp good olive oil, plus more for drizzling

  • 1 tbsp balsamic vinegar

  • 15-20 fresh basil leaves

DIRECTIONS

Preheat oven to 350.

Place bread slices on a cooking sheet in a single layer.

Bake for about 10 minutes, until bread is lightly toasted.

Top each piece of toasted bread with mozzarella cheese.

Turn broiler on to high and place toast under the broiler.

Broil until cheese is melted and bubbly, keeping a close eye on it so it doesn't burn.

Place basil and tomatoes on each slice with 1 tbsp olive oil, 1 tbsp balsamic vinegar.

Sprinkle each slice lightly with salt, pepper and Italian seasoning.
