Travis Rice who is known for his infectious personality and down-home charm recently released his new single, Runnin’ All The Red Lights. Written by Rice, David Ross and Steve O’Brien, the track follows his last release Turn Me On as well as his first No. 1 hit with Always Have Mexico.
In typical southern fashion, I grew up with a lot of casseroles like sweet potato and broccoli, fried cabbage, and fried apple pies!
Dish: Fried Apple Pies
Ingredients for the pastry:
5 cups all-purpose flour
1 TBSP salt
1 TBSP sugar
1 cup Crisco shortening
1 beaten egg
1 16 oz can evaporated milk
Combine egg and evaporated milk. Combine dry ingredients; add shortening, working in until it looks like coarse cornmeal. Add milk and egg mixture and stir until moistened. Cover with plastic wrap and refrigerate a few hours or overnight.
Ingredients for filling:
8 large apples
4 TBSP butter
1 cup sugar
1 tsp cinnamon
Recipe:
Melt butter in a skillet. Add peeled and sliced apples to pan. Add sugar and cinnamon. Cook over medium heat until soft and tender. Allow to cool.
Transfer the dough to lightly floured surface and roll to 1/4 inch thickness and cut with large round cookie cutter.
In each round place some apple filling and fold in half and seal edges with a fork.
Heat vegetable oil in a large pan until it reaches 375 degrees and brown each side of the pies until golden. Drain on paper towels.
